Ingredients

  • 3 cups almond flour
  • 1 tsp baking powder⁣
  • 1 tsp bicarbonate of soda ⁣
  • 3 ripe bananas, mashed⁣
  • 1/4 cup maple syrup ⁣
  • 1/4 cup coconut oil ⁣
  • 3 eggs⁣

Frangipane: 1/4 cup almond butter, 2 tsp almond extract, 4 tbsp maple syrup

Instructions

  1. Preheat oven to 180c⁣
  2. In a large bowl, mix together the first 3 ingredients together. Then add the next 4 ingredients. ⁣
  3. Mix until they just come together⁣
  4. In a separate bowl mix together the frangipane ingredients⁣
  5. In a prepared loaf tin, pour in half the batter, then spread the frangipane mixture.⁣
  6. Pour over remaining batter. ⁣
  7. Top with flaked almonds ⁣
  8. Bake for 50 minutes or until a toothpick comes out clean.
