Ingredients
- 3 cups almond flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 3 ripe bananas, mashed
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 3 eggs
Frangipane: 1/4 cup almond butter, 2 tsp almond extract, 4 tbsp maple syrup
Instructions
- Preheat oven to 180c
- In a large bowl, mix together the first 3 ingredients together. Then add the next 4 ingredients.
- Mix until they just come together
- In a separate bowl mix together the frangipane ingredients
- In a prepared loaf tin, pour in half the batter, then spread the frangipane mixture.
- Pour over remaining batter.
- Top with flaked almonds
- Bake for 50 minutes or until a toothpick comes out clean.
