Ingredients

Tzatziki

  • 1 greenhouse cucumber (or 2 pickling cucumbers)
  • 1 garlic clove
  • 1/2 tablespoon lemon juice
  • 1.5 tablespoons olive oil
  • 200g Greek yoghurt
  • Salt and pepper to taste

Bowl

  • 1 packet halloumi
  • Olive oil
  • Chilli flakes
  • Honey
  • 2 tomatoes
  • 2 pickling cucumbers
  • 80g quinoa (uncooked)
  • 1 apple
  • Fresh parsley

Instructions

  1. Prepare the tzatziki: Grate the cucumber and squeeze out excess water. Mince the garlic. Mix the grated cucumber, garlic, lemon juice, olive oil, and Greek yoghurt in a bowl. Season with salt and pepper to taste.
  2. Cook the quinoa: Rinse the quinoa thoroughly, then cook according to the package instructions. Set aside to cool slightly.
  3. Prepare the halloumi: Slice the halloumi into pieces. Heat a pan with a drizzle of olive oil and fry the halloumi until golden on both sides. Drizzle with honey and sprinkle with chilli flakes.
  4. Assemble the bowl: Dice the tomatoes, cucumbers, and apple. Place the cooked quinoa in bowls, then top with the diced vegetables and apple. Add the fried halloumi slices.
  5. eGarnish with a dollop of tzatziki and fresh parsley. Serve immediately.
