Ingredients
- 2 x 225g blocks of halloumi
- 1 tbsp olive oil
- 2 red peppers, finely sliced
- 1 yellow pepper, finely sliced
- 1 onion, finely sliced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp ground coriander
- 2 tsp smoked paprika
- 1 tbsp tomato puree
- 8 flour tortillas
- 1 avocado, mashed (optional)
- Salt, to taste
- Greek Yoghurt
- Refrained beans
Instructions
- Slice the halloumi into thick, short sticks.
- In a small bowl, combine the cumin, chili powder, ground coriander, and smoked paprika.
- Coat the halloumi sticks with about a third of the spice mixture.
- Heat a drizzle of olive oil in a large non-stick frying pan over medium heat.
- Add the halloumi sticks and fry for 5 minutes, turning regularly until golden brown. Remove from the pan and set aside.
- In the same pan, heat a little more oil and add the sliced peppers and onion. Stir-fry for 5 minutes until softened.
- Add the remaining spice mixture to the vegetables and fry for an additional minute.
- Stir in the tomato puree and 2-3 tablespoons of water to loosen the mixture slightly. Heat through briefly.
- Warm the flour tortillas in the microwave for 30 seconds to a minute until heated through.
- Assemble the fajitas by dividing the vegetable mixture and halloumi among the tortillas. Add mashed avocado if desired.
- Fold in the sides of each tortilla and roll them up. Cut in half to serve.
- Serve with sour cream and tortilla chips on the side, if desired.
