Ingredients

  • 2 x 225g blocks of halloumi
  • 1 tbsp olive oil
  • 2 red peppers, finely sliced
  • 1 yellow pepper, finely sliced
  • 1 onion, finely sliced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp ground coriander
  • 2 tsp smoked paprika
  • 1 tbsp tomato puree
  • 8 flour tortillas
  • 1 avocado, mashed (optional)
  • Salt, to taste
  • Greek Yoghurt
  • Refrained beans

Instructions

  1. Slice the halloumi into thick, short sticks.
  2. In a small bowl, combine the cumin, chili powder, ground coriander, and smoked paprika.
  3. Coat the halloumi sticks with about a third of the spice mixture.
  4. Heat a drizzle of olive oil in a large non-stick frying pan over medium heat.
  5. Add the halloumi sticks and fry for 5 minutes, turning regularly until golden brown. Remove from the pan and set aside.
  6. In the same pan, heat a little more oil and add the sliced peppers and onion. Stir-fry for 5 minutes until softened.
  7. Add the remaining spice mixture to the vegetables and fry for an additional minute.
  8. Stir in the tomato puree and 2-3 tablespoons of water to loosen the mixture slightly. Heat through briefly.
  9. Warm the flour tortillas in the microwave for 30 seconds to a minute until heated through.
  10. Assemble the fajitas by dividing the vegetable mixture and halloumi among the tortillas. Add mashed avocado if desired.
  11. Fold in the sides of each tortilla and roll them up. Cut in half to serve.
  12. Serve with sour cream and tortilla chips on the side, if desired.
