It controls the cleanliness of your image. By changing ISO, your camera changes the exposure by copying pixels that are next to it to fill the gaps. Unfortunately, this creates a grain that may not always be sought after. ISO should be kept as low as possible and only increased when you cannot increase Aperture and Shutter Speed, because of a certain aesthetic you are trying to achieve.
