Ingredients
- 500g beef mince(5% fat)
- 1 red onion, chopped
- 1 bell pepper ( any colour), chopped
- 2 large garlic cloves, chopped
- 250 ml tomato passata
- 70 ml Nando’s peri peri medium garlic sauce
- 120 ml water
- 1 tbsp tomato puree
- 1 tbsp soft cheese| cream cheese
- 1 ½ tbsp extra virgin olive oil
- 3 tsp peri peri seasoning
- 1 tsp sweet paprika
- 1 tsp dried parsley
- salt and pepper to taste
- 4 large tortilla wraps
- 100g grated cheese mix ( mozzarella and cheddar)
Instructions
- Heat 1 tbsp olive oil in a pan, add chopped onion and pepper and cook for 2-3 minutes over a high heat, until softened. Add beef mince and cook until browned, make sure to break it up into little pieces using a spatula.
- Add chopped garlic and cook for 1 minute, until fragrant. Add tomato puree and all seasonings, stir in well, then add tomato puree, water, Nando’s peri peri sauce, stir in well, cover with a lid and simmer over a medium to low heat, for 15 minutes. Add soft cheese, stir well and cook for another 3-5 minutes.
- Take your wrap, add some of the grated cheese mix, beef mixture and more of the grated cheese mix, then fold up the wrap.
- Heat a pan over a medium-high heat, drizzle ½ tbsp olive oil, add the beef wraps and pan fry for 2-3 minutes until golden brown.
