Ingredients

  • Protein powder (Mocha or Peanut Butter)
  • 7oz 2% Greek yogurt
  • 3 tablespoons of milk (or water)
  • 1/3 cup coffee (for dipping)
  • 4 low-sugar biscuits or crackers
  • 1 heaping tablespoon cacao powder, for dusting garnish

Instructions

  1. In a mixing bowl, whip together whey protein powder, yogurt and almond milk (or water) until smooth.
  2. Add coffee to a small bowl and dip 3 of the crackers or biscuits in the coffee for about 10 – 15 seconds, only enough time to flavor them, NOT make the soggy or overly soft.
  3. Build the parfait in a jar or bowl.  Add 2 biscuits to the bottom, then top with half of the protein yogurt, then add 1 more biscuit, and top with remaining yogurt mix.
  4. Crush the final biscuit and sprinkle on top, along with cacao powder.  Enjoy immediately!
