Ingredients

  • 4 salmon fillets (season with salt, petter and 1tsp of paprika
  • 1tbsp coconut oil
  • 2 shallots
  • 3tsp garlic
  • 1tsp ginger
  • ground cumin
  • ground coriander
  • tomato paste
    • Thai Red curry paste
  • 1 pak choi
  • coconut milk
  • salt
  • basil
  • lemon

Instructions

    1. Heat the coconut oil in a large pan, season the salmon with salt, pepper & paprika and fry on med heat (skin side up) for 4 mins (don’t move them around!) Flip & fry for another 3 mins on med/high heat, then remove & set aside
  1. In the same pan, fry the shallots for a couple mins, then add garlic, ginger & the spices and stir
  2. Add Thai red curry paste, tomato paste & red bell pepper & fry for a couple mins
  3. Add the pak choi & fry till soft
  4. Mix in the coconut milk & simmer for around 5 mins & then add salt (to taste) before adding the salmon back to the pan & garnish with Thai basil & lime
    Serve with rice or steamed pak choi & enjoy!
