4 salmon fillets (season with salt, petter and 1tsp of paprika
1tbsp coconut oil
2 shallots
3tsp garlic
1tsp ginger
ground cumin
ground coriander
tomato paste
Thai Red curry paste
1 pak choi
coconut milk
salt
basil
lemon
Instructions
Heat the coconut oil in a large pan, season the salmon with salt, pepper & paprika and fry on med heat (skin side up) for 4 mins (don’t move them around!) Flip & fry for another 3 mins on med/high heat, then remove & set aside
In the same pan, fry the shallots for a couple mins, then add garlic, ginger & the spices and stir
Add Thai red curry paste, tomato paste & red bell pepper & fry for a couple mins
Add the pak choi & fry till soft
Mix in the coconut milk & simmer for around 5 mins & then add salt (to taste) before adding the salmon back to the pan & garnish with Thai basil & lime
Serve with rice or steamed pak choi & enjoy!
