Ingredients
- Cucumber
- 6 large tomatoes
- 1 red onion
- 30g fresh parsley
- 30g fresh mint
- 1 lemon
- 2tbsp extra virgin oil
- Salt
- Pepper
Instructions
- Slice the cucumber in half + scoop out the seeds to avoid the salad going soggy. Finely dice. You can leave to sit with a pinch of salt to draw out excess moisture here too.
- For the tomatoes, finely dice then add to a sieve with 1tbsp salt. Leave to sit for 15 mins to draw out moisture.
- Finely dice the red onion, fresh parsley + mint.
- Drain the tomatoes + cucumber, reserving 2 tbsp of tomato juice.
- For a dressing (dress when serving so your salad stays fresh not soggy), simply mix 2 tbsp olive oil, tomato juice, salt, pepper + juice of a lemon.
- Add the chopped tomato, cucumber, onion + fresh herbs into a large bowl, then mix well.
- Serve alongside your main meal, or simply eat as a salad or as a dip - enjoy!
