Ingredients

  • Cucumber
  • 6 large tomatoes
  • 1 red onion
  • 30g fresh parsley
  • 30g fresh mint
  • 1 lemon
  • 2tbsp extra virgin oil
  • Salt
  • Pepper

Instructions

  1. Slice the cucumber in half + scoop out the seeds to avoid the salad going soggy. Finely dice. You can leave to sit with a pinch of salt to draw out excess moisture here too.
  2. For the tomatoes, finely dice then add to a sieve with 1tbsp salt. Leave to sit for 15 mins to draw out moisture.
  3. Finely dice the red onion, fresh parsley + mint.
  4. Drain the tomatoes + cucumber, reserving 2 tbsp of tomato juice.
  5. For a dressing (dress when serving so your salad stays fresh not soggy), simply mix 2 tbsp olive oil, tomato juice, salt, pepper + juice of a lemon.
  6. Add the chopped tomato, cucumber, onion + fresh herbs into a large bowl, then mix well.
  7. Serve alongside your main meal, or simply eat as a salad or as a dip - enjoy!
