Ingredients
- rice noodles
- cucumber
- carrot
- cabbage
- peanuts
- green onion
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp lemon juice
- 1/4 cup water
- 2 tbsp sriracha
- salt and pepper to taste
Instructions
- Cook rice noodles according to package directions. Rinse under cold water and drain well.
- Chop cucumber, carrot, and cabbage. Slice green onion.
- In a small bowl, whisk together peanut butter, soy sauce, lemon juice, water, and sriracha until smooth. Season with salt and pepper to taste.
- Combine cooked noodles, cucumber, carrot, and cabbage in a large bowl.
- Pour the dressing over the salad and toss to combine.
- Garnish with peanuts and green onion before serving.
