Ingredients

  • rice noodles
  • cucumber
  • carrot
  • cabbage
  • peanuts
  • green onion
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 1/4 cup water
  • 2 tbsp sriracha
  • salt and pepper to taste

Instructions

  1. Cook rice noodles according to package directions. Rinse under cold water and drain well.
  2. Chop cucumber, carrot, and cabbage. Slice green onion.
  3. In a small bowl, whisk together peanut butter, soy sauce, lemon juice, water, and sriracha until smooth. Season with salt and pepper to taste.
  4. Combine cooked noodles, cucumber, carrot, and cabbage in a large bowl.
  5. Pour the dressing over the salad and toss to combine.
  6. Garnish with peanuts and green onion before serving.
