Ingredients

Salad

  • Nachos chips
  • Lettuce
  • 2 cucumbers
  • 10-12 cherry tomatoes
  • 1 can red kidney beans
  • 1 can sweet corn
  • Chicken breasts
  • Mexican seasoning or chicken seasoning
  • Garlic powder
  • Salt & pepper, to taste

Dressing

  • 1 avocado
  • ½ bunch of fresh dill
  • 2 tbsp Greek yogurt (or 9% fat cheese as an alternative)
  • 2 tbsp mayonnaise
  • Juice of 1 lemon
  • Salt & pepper, to taste
  • ¼ cup water

Instructions

  1. Blend all dressing ingredients well until smooth.
  2. Season the chicken with Mexican spices, garlic powder, salt, and pepper, then sauté in a little olive oil until cooked.
  3. Let the chicken cool slightly, then cut it into pieces.
  4. Chop the lettuce, cherry tomatoes, and cucumbers.
  5. Arrange the veggies and chicken pieces in a serving bowl, drizzle with the dressing, and toss to combine.
  6. Serve the salad with nachos chips on the side.
