Ingredients
Salad
- Nachos chips
- Lettuce
- 2 cucumbers
- 10-12 cherry tomatoes
- 1 can red kidney beans
- 1 can sweet corn
- Chicken breasts
- Mexican seasoning or chicken seasoning
- Garlic powder
- Salt & pepper, to taste
Dressing
- 1 avocado
- ½ bunch of fresh dill
- 2 tbsp Greek yogurt (or 9% fat cheese as an alternative)
- 2 tbsp mayonnaise
- Juice of 1 lemon
- Salt & pepper, to taste
- ¼ cup water
Instructions
- Blend all dressing ingredients well until smooth.
- Season the chicken with Mexican spices, garlic powder, salt, and pepper, then sauté in a little olive oil until cooked.
- Let the chicken cool slightly, then cut it into pieces.
- Chop the lettuce, cherry tomatoes, and cucumbers.
- Arrange the veggies and chicken pieces in a serving bowl, drizzle with the dressing, and toss to combine.
- Serve the salad with nachos chips on the side.
