Ingredients

  • 1 large onion
  • 3 cloves of garlic
  • 3 chilis
  • 1 very large tomato
  • Olive oil
  • 1 tbsp tomato puree
  • Salt & pepper
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 cans of butter beans (any white beans can be used)
  • Mascarpone Cheese

Instructions

  1. start by finely chopping all the veggies.
  2. Saute the onion in a drizzle of olive oil and once it wilts add the garlic. Chili. Tomato puree and the chopped tomato.
  3. Stir everything then drop the heat to a medium. Cover and let the tomatoes cook for about 4 minutes or till nice and soft.
  4. Season with salt. Pepper. Cumin powder. Coriander powder then add the two cans of beans with a splash of water.
  5. Once mixed let the beans cook for another 4-5 minutes to soften. Mash a couple of the beans just to thicken the sauce.
  6. Spread the cheese on top. ( use any cheese you like. Cream cheese is optimal)
  7. Sprinkle some green on top. Have it with some bread a cup of tea and enjoy.
