Ingredients
- 1 large onion
- 3 cloves of garlic
- 3 chilis
- 1 very large tomato
- Olive oil
- 1 tbsp tomato puree
- Salt & pepper
- 1 tsp cumin powder
- 1 tsp coriander powder
- 2 cans of butter beans (any white beans can be used)
- Mascarpone Cheese
Instructions
- start by finely chopping all the veggies.
- Saute the onion in a drizzle of olive oil and once it wilts add the garlic. Chili. Tomato puree and the chopped tomato.
- Stir everything then drop the heat to a medium. Cover and let the tomatoes cook for about 4 minutes or till nice and soft.
- Season with salt. Pepper. Cumin powder. Coriander powder then add the two cans of beans with a splash of water.
- Once mixed let the beans cook for another 4-5 minutes to soften. Mash a couple of the beans just to thicken the sauce.
- Spread the cheese on top. ( use any cheese you like. Cream cheese is optimal)
- Sprinkle some green on top. Have it with some bread a cup of tea and enjoy.
