Ingredients
- 4 salmon fillets (480g)
- Pack of tenderstem broccoli 3 garlic cloves, chopped
- 3 spring onions, thinly sliced
- 30 ml sriracha sauce
- 30 ml reduced salt soy sauce
- 1 tbsp honey
- 1 tbsp olive oil
- 2 tsp dried parsley
- ½ tsp smoked paprika
- ½ tsp paprika
- ½ tsp garlic granules
- ½ tsp onion granules
- Pepper and salt to taste
- 200g long grain easy cook rice
- Ingredients for bang bang sauce
- 3 tbsp light mayonnaise
- 2 ½ tbsp sriracha sauce
Instructions
- Preheat oven to 190C(fan).
- Remove the skin from the salmon fillets and cut into bite size pieces.
- In a bowl combine 30 ml sriracha, soy sauce, honey, olive oil, smoked paprika, paprika, garlic granules, onion granules, dried parsley, salt and pepper, then add salmon bites and mix well.
- Line a baking tray with baking paper and add the salmon
- Bake salmon in the centre of the oven for 14-16 minutes or until cooked throughly.
- Cook the rice according to the package instructions.
- In a small bowl stir together 3 tbsp light mayonnaise and 2 ½ tbsp sriracha until well combined.
- Boil, steam or roast the broccoli according to your preference.
- Serve with the rice, broccoli, salmon bites and bang bang sauce. Garnish with thinly sliced spring onion.
