Ingredients

  • 4 salmon fillets (480g)
  • Pack of tenderstem broccoli 3 garlic cloves, chopped
  • 3 spring onions, thinly sliced
  • 30 ml sriracha sauce
  • 30 ml reduced salt soy sauce
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 2 tsp dried parsley
  • ½ tsp smoked paprika
  • ½ tsp paprika
  • ½ tsp garlic granules
  • ½ tsp onion granules
  • Pepper and salt to taste
  • 200g long grain easy cook rice
  • Ingredients for bang bang sauce
  • 3 tbsp light mayonnaise
  • 2 ½ tbsp sriracha sauce

Instructions

  1. Preheat oven to 190C(fan).
  2. Remove the skin from the salmon fillets and cut into bite size pieces.
  3. In a bowl combine 30 ml sriracha, soy sauce, honey, olive oil, smoked paprika, paprika, garlic granules, onion granules, dried parsley, salt and pepper, then add salmon bites and mix well.
  4. Line a baking tray with baking paper and add the salmon
  5. Bake salmon in the centre of the oven for 14-16 minutes or until cooked throughly.
  6. Cook the rice according to the package instructions.
  7. In a small bowl stir together 3 tbsp light mayonnaise and 2 ½ tbsp sriracha until well combined.
  8. Boil, steam or roast the broccoli according to your preference.
  9. Serve with the rice, broccoli, salmon bites and bang bang sauce. Garnish with thinly sliced spring onion.
